Healthy Lunch Ideas for Moms On The Go

Even though you only have to please one person {yourself} you have to plan what to eat, hoping that it will still sound good at lunch time and won’t interfere with what you’re eating for dinner. You also have to find something that will work into your schedule and is easily transportable. If you’re trying to watch your budget or make fewer trips through the drive-thru window, here are a few healthy lunch ideas for moms on the go!

Leftovers. Ok, I know this isn’t anyone’s favorite. But if you have leftovers in the fridge, they’re always an option and are typically healthier than running through the drive through for a burger and fries.

Mason Jar Salads. These are all the rage in lunch rooms across the country. The premise is to layer your salad, creating easy storage and transportation. You can assemble multiple jars ahead of time and just grab one on your way out the door! Start with your dressing on the bottom (so nothing gets soggy), add meat, fruits and veggies – then top with lettuce and anything crunchy. There so many varieties to choose from! If you don’t have any mason jars, Dollar Tree has them for a very affordable price. Bento Box Lunches. Not just for kids anymore! And kudos to you if you can create fun ways to arrange your food like you see on all the crafty Pinterest boards. This basically consists of you coming up with (healthy) foods you like and putting them in one container (that has multiple storage areas) for easy transportation. Think of a Lunchable on steroids! Pre-Cooked Meats/Veggies. If you have a little extra time on the weekend you can do what a friend of mine does and cook up a few chicken breasts and steam some veggies. BOOM. Lunch for the week!

Brown Bag Special. Old Faithful. Make a sandwich, throw in some fruit and veggies, and you’re done. Add in a bag of chips and it lessens the healthy factor, but (again) better than a drive through!

If you take 15 minutes each night (or about an hour on the weekend if you want to make them all at once), you will have a perfect lunch the next day or week. Just don’t pull a “Kendra” and leave it in the refrigerator (or even worse…on the cabinet).
