This time of year, food is refreshing. recipes for summer

I love keeping a jug of water with sliced lemons or cucumbers mixed with fruit on hand. There’s something about simple, easy, fresh recipes and snacks that scream “Summer!”

Taking something from the market to the table with little prep is right up my alley.

Healthy, taking little time… yes, please.

While, freshly rinsed and sliced strawberries mixed with a handful of blueberries always makes a quick and easy snack, here are a few other easy ideas to take your farmer’s market produce to the table.

  • Tomatoes with Mozzarella

Simply slice ripe tomatoes and fresh mozzarella. You can keep it simple and sprinkle them with just olive oil and pepper or you can add a little more flavor and also drizzle some balsamic vinegar and add a touch of basil. Try mixing corn, fresh tomatoes and mozzarella too! Delish!

  • Sweet Potato Slices on the Grill

Grilled sweet potatoes are my all time favorite veggie. Peel the skin off your potatoes, cut the potato into thin slices and toss the slices in olive oil, then sprinkle with salt. Place them on the grill for about 10 minutes, flipping them once. When they are soft and warm, they are ready to go!

  • Blueberry Kabobs

Pile several blueberries (8-12) on a skewer side by side. Roll them around in thick yogurt (we like the greek kind) until they are covered. Place the skewers in the freezer for about two hours and voila!

  • Brown Sugar Baked Peaches

This is a treat. Simply slice a peach in half and take out the pit. Add a dollup of butter, and add a teaspoon of brown sugar and sprinkle with cinnamon. Bake the peaches at 375 degrees for about 20-30 minutes. Yum!

  • Easy Peasy Apple Slices

Sliced apples are awesome. There are so many things you can pile on top of these bad boys to make an amazing snack or lunch. Core your apple, slice horizontally and then your options are endless. Some of my favorite toppings are peanut butter & chocolate chips, tuna salad, yogurt & granola and chicken salad with cranberries.
