I love pumpkin. The smell, the taste, and the color scream, “FALL IS HERE!!!” Unfortunately, I’m the only one in my house who feels this way, so I don’t get to cook with pumpkin very often. I really just use it for holiday parties or gatherings, so I’m so excited to share these recipes with you!
We moms are very busy human beings, so I’ve chosen some very simple, easily adaptable (to put your own stamp on them) recipes. The first is a dip (no baking required!), second is a simple cake using a store bought cake mix,and third is something cold & healthy! king with these recipes!
Easy Pumpkin Dip Recipe
Only 3 ingredients in this one!
• 1 tub cool whip (you can even use fat free!)
• 1 box instant vanilla pudding mix
• 1 can pureed pumpkin
Combine all ingredients and chill for at least 2 hours. Serve with graham crackers (the sticks are the best), apple wedges or ginger snaps. {can be stored for a few days in air-tight container}
Easy Pumpkin Pie Cake 
• 1 large can pumpkin
• 1 can (12 oz) evaporated milk
• 3 eggs
• 1 cup brown sugar
• 2-4 tablespoons pumpkin pie spice (start with two)
• 1/2 tsp salt
• 1/2 box yellow cake mix (reserving other 1/2)
• 1 stick melted butter
Combine all ingredients (except for reserved cake mix and butter). Test taste to see if you want to add more pumpkin pie spice. Pour into greased 9×13 pan. Sprinkle other 1/2 of reserved dry cake mix on top. Pour melted butter over top. Bake for 50 minutes at 350 degrees. *You can add nuts on top of cake before baking, but I’m not a nut person.
Tip: Serve with vanilla ice-cream or whipped cream and be prepared for a food coma!
Easy Healthy Pumpkin Shake
• 1 cup sliced frozen bananas
• 1/2 cup canned pumpkin
• 1 tsp Almond extract
• 1/2 cup milk (any you choose)
• 1 tsp cinnamon or pumpkin pie spice
Combine all ingredients a blender. Makes 1-2 servings. You can add more milk for a milkshake consistency or less for a soft serve consistency!
Tip: Great for a quick breakfast or after school snack!
