Fun Fall Recipes Using Five Ingredients or Fewer

It’s fall y’all! Lately, youll notice many of us here at the Wichita Moms Blog have chosen to write about all things fall.  And Im not mad about it!

Why do we love this time of year so much? Personally, its my favorite time of year due to college football (Boomer Sooner!), the crisp air, leaves changing, and all the yummy things we crave this season: spiced everything, pumpkin flavors, cinnamon and apple… Its hard not to fallin love with autumn (see what I did there?)

I’ve put together some easy autumn treats you can make for your family using 5 ingredients or fewer!

Pumpkin Spice Cream Pies: (makes about 1 dozen)

  • 1 box spice cake mix
  • 1 can pure pumpkin (be sure it’s pure pumpkin, not pie filling)
  • 1 container cream cheese frosting
  • cinnamon or pumpkin pie spice (optional)

Preheat oven to 350 degrees. Using a mixing bowl and large spoon, mix together cake mix and canned pumpkin puree. Add in a couple dashes of cinnamon and or pumpkin pie spice if you desire extra flavor (as I do!) Once mixed well, use a tablespoon to drop spoon fulls of batter onto a greased cookie sheet about 2 inches apart. Press down with the back of the spoon to slightly flatten each cookie. Bake for 13-15 minutes. Use a toothpick to poke in the center to check they’re fully baked. Bake another 1-2 minutes if needed. Remove from oven and let cool. Frost the bottom side of one cookie then press another cookie to the frosting to make a little cookie sandwich. Repeat with remaining cookies.

Autumn Candy Pretzels (makes 25 pieces)

  • 25 mini twist pretzels
  • 25 Rolo chocolate caramel candies 
  • 25 pieces of candy corn

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. Lay each pretzel flat on the cookie sheet in a single layer. Place an unwrapped Rolo on the center of each pretzel. Bake about 3 minutes until the Rolos begin to soften. After removing from the oven, place a candy corn piece on top of each Rolo, gently pressing until it slightly sinks in. Place in the fridge for at least 1 hour to cool before serving. 

Pumpkin Pie Pancakes (makes about 1 dozen small pancakes)

  • 2/3 cup canned pure pumpkin (be sure it’s pure pumpkin, not pie filling)
  • 1 cup water
  • 2 cups pancake mix
  • 1 teaspoon pumpkin pie spice
  • 1 container of frozen whipped topping or pure maple syrup

Mix pumpkin puree, pancake mix, water, and pumpkin spice in a mixing bowl (the batter may be a bit lumpy, this is ok).  Heat a nonstick pan over medium heat. Pour about 1/4 cup batter onto the pan. Cook until the pancake batter begins to form bubbles and pop (about 2 minutes). Using a flat spatula, flip the pancake carefully. Cook the other side for about 2 minutes and remove from heat. Continue with the remaining batter. Serve these on a plate with a dollop of frozen whipped topping or maple syrup.

Baked Cinnamon Apples a la Mode (about 6 servings)

  • 6 large apples of your choosing-cored, peeled and diced
  • 3 tablespoons brown sugar
  • 3 teaspoons cinnamon
  • 1/4 cup water
  • 1 pint vanilla bean ice cream

Preheat oven to 350 degrees. Grease a large baking dish and pour in the apple chunks. Mix sugar and cinnamon together and toss throughout the apples making sure evenly distributed. Bake for 30 minutes. Remove from the oven and pour water evenly over the apples. Place back in the oven to bake another 15 to 20 minutes. Remove from the oven and spoon into small bowls topping with a scoop of vanilla ice cream.

Spiced Krispie Treats (makes about 24 squares)

  • 3 tablespoons butter
  • 10 ounce bag mini marshmallows
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 6 cups crispy rice cereal

Grease a cookie sheet or medium baking dish. In a large nonstick pan, melt the butter over medium-low heat. Add the marshmallows into the pan and continue stirring until melted. Stir in the spices, mixing throughout. Remove from heat and allow this to cool about 5 minutes. Add in cereal, mixing until combined. Pour the mixture into your baking dish. Wet hands (to prevent sticking) and gently press treat mixture into the dish evenly. Let set for at least half an hour before serving.
