5 Easy No Bake Desserts For Summer Your Family Will Love

No one wants to use the oven in the summer. It’s hot and humid, and why heat your house when your air conditioner is working so hard to keep you cool? I’ve got five delicious sweet treats for you that don’t require your oven – some don’t even require a stove. Winning!

Cookie Salad

First up is one of my family’s favorite desserts. We love it so much we eat it year round. It sounds weird and looks weird but trust me, these ingredients together make THE most delicious dessert. There are tons of different forms of this dessert but this is our family’s and everyone who has tried it, falls in love. It’s Cookie Salad!

  • 3.5 oz vanilla instant pudding mix
  • 8oz Cool Whip
  • 1 cup buttermilk
  • Small can drained crushed pineapple
  • Small can drained mandarin oranges
  • 2 rows of fudge striped cookies

Directions

In a bowl, mix together pudding mix and buttermilk until pretty smooth.

Fold in the whip cream until combined.

Add the drained fruit to the mixture and stir in. Cover and refrigerate for at least an hour.

Crush the cookies. You can mix in the whole bowl but we keep separate and individuals add whatever amount they’d like to their serving.  

Keep refrigerated. Enjoy and you’ll probably want to double your ingredients because it’s so yummy!

Lemon Fruit Dip

Next up is a fruit dip that is jazzed up with some lemon. Feel free to leave the lemon out of the recipe and substitute with some vanilla extract. We love buying a prepared fruit tray if we’re feeding a crowd or want the ease of not cutting up fruit. Otherwise we dip strawberries, bananas, grapes, cantaloupe, pineapple and apples in this dip. It’s even delicious with graham crackers.

  • 8oz softened cream cheese
  • 1-2 tsp lemon zest depending on how much lemon flavor you want
  • 2 Tbsp lemon juice
  • 1 7oz container of marshmallow crème

Directions

Using a hand or stand mixer, whip together cream cheese and zest until smooth.

Mix in lemon juice and marshmallow crème.

Cover and refrigerate.

Chex Mix

Another delicious dessert is this Chex Mix brought to you by Six Sisters Stuff. It’s a fun twist on the Muddy Buddy dessert.  I’m obsessed with this stuff. The crunch plus the sweetness makes an addicting treat! Make sure you make this and hide it so you don’t have to share with the kids!

Lemon Cheesecake Bars

This dessert is pretty dang easy and you can really change it up with your fruit. These are no bake lemon cheesecake bars. The author of this recipe uses blueberry topping but I’ve made it with fresh strawberries or raspberries. I love a good cheesecake but sometimes it’s just too much work and heat and these are a good substitute.

Rice Krispies Treats

Don’t get me started on Rice Krispies bars. I have an addiction to them and can’t stop! Try adding funfetti cake mix to your melting marshmallows next time you make them but if you really want to get wild and have the most amazing bars, try these Nutter Butter ones. Seriously so delicious. My kids go wild over these. If you have littles with a peanut allergy, try using a seed butter and using chocolate sandwich cookies.
